Simon's Apple Strudel

  1. Prepare the Filling: In a large bowl, toss the sliced apples with the sugar, raisins, cinnamon, and the tablespoon of flour. The flour helps to soak up the juices so the pastry stays crisp.
  2. Roll out the Pastry: On a lightly floured surface, roll out the puff pastry sheet into a large rectangle.
  3. FIll it up: Arrange the apple mixture in a log shape down the center of the pastry, leaving about 1 inch of space at the edges.
  4. Fold and Seal: Fold the sides of the pastry over the filling and tuck in the ends. Carefully transfer the strudel to a baking sheet lined with parchment paper, seam-side down.
  5. The Finish: Brush the top generously with the egg wash and cut a few small slits in the top to let the steam escape.
  6. Bake: Bake in a preheated oven at 400°F (200°C) for about 25–30 minutes, or until the pastry is puffed and beautifully golden brown.
